Second Self Funky Mole

Our first true sour beer. It was a test and turned out pretty good. We did not make much and we wont be making these often so get it while you can — only at the brewery. This is a two bourbon barrel blend: one soured, one not. Both aged 6 months. The sour one was finished with a spontaneous culture we started by leaving Mole Porter out in the winter, a-la coolship, to pick up some native yeast. We let the critters do their thing and the result is pretty great. The spices are very subdued at this point but still there. Good balance of oak, spice, and funk
